Ingredients
1 cup softened butter
1/2 cup vegetable shortening
3 cups sugar
5 large (or 6 medium) eggs
2 tsp lemon extract
1/4 tsp salt
3 cups + 5 Tbsp sifted flour
1 cup milk
1/2 tsp baking soda
1 tsp cream of tartar
Preparation
Cream butter, shortening, and sugar together well. Add eggs 1 at a time blending just enough to mix. Add lemon extract and salt. Add flour and milk alternately, ending with the flour. Sprinkle baking soda and cream of tartar (sifted together) on top of the batter and fold in gently. Pour into a large greased and floured tube pan and bake at 315 degrees for 1 hour and 15 minutes. DO NOT OPEN THE OVEN UNTIL THE CAKE IS DONE. Sprinkle with powdered sugar or glaze with a favorite icing.
