Ingredients
Crust
2 Cups Graham Cracker Crumbs
1 Cup Sugar
1 Teaspoon Cinnamon
1/2 Cup Butter
Mix all ingredients and press into a 9" spring form pan and bake for 7 minutes at 350.
1 1/2 Pounds Cream Cheese
1 Cup Heavy Cream
4 Eggs
1/2 Cup Sugar
1/2 Teaspoon Salt
1/3 Cup Flour
1/4 Cup Fresh Lemon Juice
Grated Peel of 1 Lemon (Yellow part only)
Preparation
In the bowl of an electric mixer fitted with the paddle attachment, mix cream cheese and cream until smooth. With mixer running add eggs, one at a time, until well incorporated. Add sugar, salt , flour, lemon juice and peel and mix well.
Pour into crust and bake at 350 for 1 hour or until middle of cake is set. Turn off oven, open oven door all the way and allow cake to cool slowly in oven.
Serve with fresh berries or fruit.
