Ingredients

WHOLE BATCH

3 1/2 c flour

2 c sugar

2 tsp baking soda

1 tsp salt

1 tsp cinnamon

1 tsp nutmeg

1 c oil

1/2 c water

4 eggs

2 c pumpkin (canned is just fine!)

1 tsp vanilla

HALF BATCH

1 1/2 c flour

1 c sugar

1 tsp baking soda

1/2 tsp salt

1/2 tsp cinnamon

1/2 tsp nutmeg

1/3 c oil

1/4 c water

2 eggs

1 c pumpkin (canned is just fine!)

1/2 tsp vanilla

Preparation

PREHEAT oven to 350. Sift together the dry ingredients (flour, sugar, baking soda, salt, cinnamon, nutmeg). In another bowl, mix the remaining ingredients (oil, water, eggs, pumpkin, vanilla). Blend the dry ingredients into the wet ingredients.

Bake in a 350 degree oven. Loaf pan: 50-60 minutes Muffins: 20 minutes
