Ingredients
6-8 thick sliced tomatoes
2/3 Cup olive oil
1/3 Cup white vinegar
1/4 Cup chopped fresh basil
1/4 Cup chopped fresh parsley
1/4 Cup sliced green onions
1/4 tsp garlic powder or around 4-5 minced garlic cloves
1/4 tsp thyme leaves from 3-4 sprigs
1 tsp salt
1/4 tsp pepper
Preparation
Except for tomatoes, throw everything into food processor and lightly pulse to combine ingredients
Pour into shallow dish and marinate tomatoes for 24 hours
If marinade doesn’t fully cover tomatoes, turn tomatoes after 12 hours
