Ingredients
15 ounce can White Kidney Beans (Cannellini), drained and rinsed
15 ounce can Lima Beans, drained and rinsed
15 ounce can Butter Beans, drained and rinsed
4 cup Vegetable Broth
1 large White Onion, diced
2 Tablespoons Olive Oil
1 Bay Leaf
1/4 cup Brown Sugar
1 Tablespoon Lemon Zest
3 Tablespoons Cider Vinegar
Preparation
In a pot, saute onions in olive oil with bay leaf until tender. Remove bay leaf, add remaining ingredients and simmer for 1 hour.
