Ingredients

300 ml gin

100 ml water

100 ml simple syrup

150 ml freshly squeezed lime juice

150 ml fresh lemon juice

200 ml heavy cream

4 egg whites or 8 tablespoons pasteurized liquid egg whites

2 tablespoons orange blossom water

Club soda

Preparation

Combine gin, water, simple syrup, lime and lemon juices, heavy cream, egg whites, and orange blossom water. Whisk together and transfer to a whip cream cylinder. Charge the cylinder with 2 NO2 canisters and store on ice for at least 30 minutes.

Discharge into glasses and top each drink with splash of club soda.
