Ingredients
1-14 oz can Stewed tomatoes (Italian Style optional)
I small basket of cherry tomatoes
2 oz sun dried tomato strips
3 cloves of garlic
olive oil
oregano, basil, salt & crushed red pepper to taste
Angel Hair Pasta (or another favorite)
Preparation
Saute minced garlic in olive oil in large pan. When lightly golden, add undrained stewed and sundried tomatoes, herbs & spices.
Bring to a light simmer, stirring frequently. Sauce will reduce down to a thicker consistancy. When desired thickness is almost reached, add cherry tomatoes cut in half. Simmer for 1 - 2 more minutes & serve over freshly prepared pasta.
Freshly grated parmesean cheese added on top makes this dish extra yummy.
