Ingredients
4 c chicken broth
2 c water
2 c split red lentils
salt
1 T olive oil
1 onion, chopped (1 cup)
4 garlic cloves, minced
1 T grated fresh ginger
1 1/2 tsp garam masala
1/2 c minced cilantro
1 (14 oz) can light coconut milk
pepper to taste
1 plum tomato, seeded & chopped
fresh lime juice, if desired
Preparation
Bring chicken broth, water, red lentils, and salt to a boil, covered in a large sauce pan. Reduce to a simmer.
Meanwhile, saute olive oil and onion. Add garlic, ginger, and garam masala and cook til done. Add onion mixture to cooked lentils and simmer about 10 minutes.
Add minced cilantro and coconut milk and continue cooking about 10 minutes.
Garnish with fresh diced tomato (and olive oil and lime juice, if desired).
