Ingredients

1 cup peanut butter (creamy or chunky)

1 cup sugar

1 large egg

1 teaspoon baking soda

Preparation

Preheat oven to 350 degrees and spray cookie sheet with no-stick spray. Beat together peanut butter and sugar until combined. Beat in the egg. Sprinkle baking soda over the mixture and mix until combined. Roll dough into 1 inch balls and place an inch apart on cookie sheet. With tines of a fork, flatten balls in a crisscross pattern. Bake cookies about 10 minutes. Cool cookies on baking sheet for atleast 2 minutes. This is important because they are fragile when hot from the oven, and they need time to set up.
