Ingredients
3/4 cup egg whites
2 whole wheat tortillas
2 3/4 cups canned black beans
1/2 cup shredded nonfat mozzarella cheese
1 cup salsa
1 teaspoon ground cumin
1 teaspoon garlic salt
Preparation
Preheat the oven to 350F
Whisk together the egg whites, cumin, garlic salt, and pepper. Coat a nonstick skillet with cooking spray and heat the skillet. Add the egg white mixture. Cook and stir over low heat until egg whites are cooked. Set aside.
Lay tortillas on a cutting board and sprinkle with black beans. Top with egg and shredded cheese and roll tightly. Wrap the burritos in foil and bake for 2 minutes.
To Serve: Unwrap the burritos, cut in half, and serve with salsa.
