Ingredients
2-4 Tablespoon olive oil (or other)
3-5 freshly chopped cloves of garlic
1/2 Tablespoon chili flakes (optional)
1 can white kidney beans (substitute navy beans or other)
1 Tablespoon dried basil flakes
1 large can vegetable or minestrone soup
Preparation
Step 1. Add chopped garlic and chili flakes to hot oil until slightly toasted. Step 2. Open the can of beans, but drain the liquid. While still in the can, rinse the beans twice with water. Add beans to garlic and stir. Step 3. Add in dried basil and stir. Step 4. Using a potato masher, crush the beans directly in the pot. Step 5. Add in vegetable soup, stir and bring to boil. Serves two.
Goes great with white cheddar cheese and crusty bread.
