Ingredients

1-2 T olive oil

1 small onion diced

1 lb ground chuck

5 meduim russets peeled and diced

5 carrots, peeled and diced

1 can sweet corn, drained

1 can peas, drained

48 oz V-8 juice

Preparation

Preheat oven to 350F Place oil and onion in frying pan. Let onions carmalize a bit. Add the meat. Brown until crumbled, but still a bit pink. Drain Place all ingredients into a baking dish Bake at 350 for an hour or until potatoes and carrots are fork tender
