Ingredients

1 stick unsalted butter

1 1/4 c sugar

2 well beaten eggs

4 tbsp sour cream

1 tsp baking soda

1 1/2 c “fluffed” flour

1/2 tsp salt

1 tsp Vanilla

3 very ripe bananas

Preparation

Preheat oven to 35o Degrees. Butter and dust with flour a loaf pan. Cream sugar with butter until light. Add the well beaten eggs. Dissolve 1 tsp. baking soda in the sour cream and set aside.Mash 3 very ripe bananas.Combine the flour and salt. Add the sour cream mixture to the batter and then alternately, add the flour/salt flour mixture and the mashed bananas. Add the vanilla and beat until well combined. Pour into prepared loaf pan and bake @ 350 degrees for one hour (or until toothpick inserted comes out clean.
