Ingredients
2 acorn squash
4 T. butter
salt pepper
brown sugar
Cinnamon
Nutmeg
water
Preparation
Preheat oven to 350 degrees. Cut each squash in half and scoop out the seeds. Place squash cut side down in shallow baking dish with 1/4 inch water. Bake 1/2 hour. Open oven carefully as it is very hot. Pour out water. Turn squash over. Start filling hollowed side of squash. Add butter, brown sugar and spices. Bake an additional 1/2 hour or until squash is tender and easy to mash. Check every 10 min., if squash is getting too brown, cover with foil until done.
