Ingredients

1/2 squeezed lemon

1/2 cup virgin olive oil

5 (yes, it says 5) cloves garlic, pressed

1/2 cup crumbled blue cheese (you can add more if you really like blue cheese)

1/2 cup finely grated parmesan cheese

Plenty of freshly ground black pepper

2 bunches of romain lettuce, torn into bite sized pieces

Preparation

Place the lemon, olive oil, garlic, blue cheese, half of the parmensan cheese and the pepper into a small bowl. Set aside for at least 20 minutes to blend the flavors.

Tear the lettuce up into a large salad bowl. Pour the dressing over the salad and lightly toss it all. Let this sit, refridgerated, for 15 minutes. This is important, it really blends the flavors.

Lightly toss again. Top with remaining grated parmesan cheese and freshly ground black pepper.

This goes really well with toasted baguette or bread sticks
