Ingredients

2 dried smoked jalapenos (chipolte (med hot)

1/2 onion, chopped

3 cloves garlic, chopped

olive oil (about 1 T)

1 tsp cumin

1/4 tsp coriander (dried)

1/2 tsp chile powder

1 T tomato paste

salt and pepper

14 oz can diced tomatoes

Preparation

Simmer dried jalapenos in small pot of water (just to cover) until soft – 15 minutes.

Save water. Seed, core, and chop jalapenos.

Saute jalapenos, onion, and garlic in oil a few minutes.

Add remaining ingredients.

Simmer 1 hour.

Puree.
