Ingredients
4-6 cloves of garlic
pinch of salt
3 egg yolks
2 cups olive oil
1 tablespoon fresh lemon juice
water or light cream (optional)
Preparation
Chop garlic fine and pound in a mortar until smooth. Beat in the egg yolks.
Add the oil, drop by drop at first, then in a thin stream when mixture starts to thicken.
Add fresh lemon juice to taste and thin with water or light cream.
To stop a skin from forming, cover with a piece of plastic wrap.
