Ingredients

1 cup cilantro

3 tbs chopped scallions

1/2 small bonnet pepper or Jalapeño

1 tbs yellow onion or sweet onion

2 tsp lime juice

3/4 cup water

Preparation

1 cup finely chopped fresh cilantro leaves 3 tablespoons finely chopped scallions 1/2 small Scotch bonnet pepper, seeded and finely chopped or dry chili to taste 1 tablespoon finely chopped yellow onion 2 teaspoons fresh lime juice 3/4 cup water Salt

Combine the cilantro, scallions, Scotch bonnet, onion, lime juice and water in a small glass bowl or jar with a tight fitting lid. Season with salt, to taste. Stir all the ingredients together. Set the Aji aside for several hours to allow the flavors to blend
