Ingredients

4 (8-oz) pieces center-cut salmon fillet (about 1 inch thick) with skin

3 tablespoons Yellow Miso paste

2 tablespoons Mirin or Sake or both (half & half)

1/3 bunch of Scallions, minced

Pinch of sugar (optional - you may want to add this if you are using only Sake and no Mirin)

Preparation

Pre-heat oven to 350F

In a ball combine Miso-paste, Mirin (Sake) and Scallion. Mix well and keep at room temperature.

Wash the salmon fillet, dry with paper towel. Apply salt and pepper to the fish.

Place salmon on the baking sheet, skin side down, and apply Miso-scallion paste on top, cover all the top surface.

Place the baking sheet in the oven and cook for 10-15 minutes, until the fish is barely done. Serve immediately.
