Ingredients

1 lb. cleaned and flaked smoked salmon (I use 2 one pint jars homemade smoked salmon)

8 oz. cream cheese (room temperature)

¼ - 1/3 cup mayonnaise

Juice of ½ small fresh lemon

1/3 cup rough chopped sweet pickle chips

1/3 cup rough chopped walnuts

2 - 3 green onions thinly sliced

Dash of Tabasco (optional)

Salt and fresh ground black pepper to taste

Chopped fresh Chives

1 loaf Italian baguette cut into 1/4 or 1/2-inch diagonal slices

Olive oil

Preparation

Stir together cream cheese, mayonnaise and lemon juice, salt, pepper and tabasco until smooth and creamy. Mix in chopped pickles, walnuts, and green onions until well incorporated. Gently stir in smoked salmon.

Prepare grill or preheat oven to 350 degrees F. Lightly brush baguette slices with olive oil and place on grill to brown both sides. The grill will impart a light smoky flavor. If using the oven, set the baguette slices on a baking sheet and lightly brush with the olive oil. Bake until light brown on both sides, turning once, about 4 minutes

Mound smoked salmon spread on toast and garnish with chives.
