Ingredients

6 cups water

1 lb frozen meatballs, cooked according to package instructions

8 oz can tomato sauce

1/2 onion, finely chopped

1 tsp vinegar

1 garlic clove, minced

2-3 large potatoes, cut into 1/2 inch cubes

1 large carrot, cut diagonally into 1/4 inch slices

2 tsp. chicken bouillon granules

1 1/2 tsp fresh oregano

1 1/2 tsp fresh thyme

1/4 cup cilantro, chopped

Preparation

  1. Bring water to a boil in a large pot.
  2. Add meatballs, tomato sauce, onion, vinegar, garlic, potatoes, and carrots. Return to a boil.
  3. Mix in bouillon, oregano, & thyme.
  4. Simmer until carrots & potatoes are tender, 20-30 minutes.
  5. Stir in cilantro.
