Ingredients
1 9oz package cheese tortellini
1/4 cup evo
2 tbs lemon juice
2 tbs red wine vinegar
1 tbsp Fresh chopped parsley
1/2 tsp dry oregano
1/4 salt
3 boiled eggs
1/2 pound baby spinach leaves
1/2 cup crumbled feta
1/4 cup slivered red onion
Preparation
Cook tortellini until al dente.
Mix EVO, Lemon juice Red wine vinegar, parsley, oregano and salt. Add tortellini and toast - chill at least 2 hours covered
mix spinach, feta, onion and quartered eggs to bowl. Serve
