Ingredients

3 eggs beaten

1 cup granulated sugar

1/2 cup lemon juice

1 tbsp. grated lemon rind

1/4 cup butter

Preparation

( I use double boiler). Combine eggs, sugar, lemon juice, rind, and butter. Cook at just below boil, stirring almost constantly, until thick enough to coat a spoon, about 15 minutes. (Will thicken when cold). Makes about 1 1/2 cups.
