Ingredients
1 large bunch spinach
1/2 package bacon
4 hard boiled eggs
Dressing
1/4 cup vinegar
2 Tbsp prepared yellow mustard
Pepper
Salt
Preparation
Wash and julienne spinach. Bake or microwave 1/2 package of bacon until crispy. Crumble crispy bacon into small bits. Use egg slicer to slice 4 hard boiled eggs. Toss spinach and bacon and eggs together.
Combine vinegar, mustard with a pinch of salt and pepper in a blender and blend until emulsified.
Serve and drizzle dressing over salad.
