Ingredients

4 lbs potatoes

1 tbsp. plus tsp. salt

3 tbsp cider vinegar

3 L hard boiled eggs

1 cup mayonnaise

1/2 tsp. ground pepper

1 tsp. dry mustard

1/2 tsp. whole celery seeds

3 celery stalks, diced

1 red bell pepper

1 medium onion, diced

10 cornichons, diced

3 scallions

2 tbsp. chopped fresh flat leaf parsley

1 tsp. paprika

Preparation

  1. Place potatoes in large pot with enough water to cover by several inches. Bring to a boil, add 1 tbsp. salt and reduce to a simmer. Cook until tender, about 25 minutes. Drain into colander. Drizzle with vinegar; set aside. 2. Combine chopped eggs, mayonnaise, celery seeds, mustard, 2 tsp. salt, and pepper in a large bowl. Add potatoes to mayonnaise mix. Add the celery, red pepper, onion, cornichons, scallions, and chopped parsley. Stir to combine. Chill for 30 minutes before serving. Garnish with paprika.
