Ingredients
1 Whole Head of Garlic/Cloves separated
1 Full Bunch Flat Leaf Parsely
1 TBLS Cracked Peppercorns of Choice/black, green, red, white
1 TBLS Kosher Salt
Juice of 2 Lemons
Fresh Sage & Thyme Leaves to taste
1 Cup Extra Virgin Olive Oil
Preparation
Clean and corsely chop garlic, parsely, sage and thyme. Add peppercorns and salt. (At this point you can add any flavores particular to your culture - Chinese Five Spice, fenugreek, curry flavores, etc.) Stir in lemon juice and oil, mixing well. When well mixed spread on food before cooking as marinade - during - as a grilling sauce, and serve with entre as a dipping sauce!
