Ingredients
4 large cloves of garlic.
4 oz. of Basil leaves
4 oz. Follow Your Heart Vegan Gourmet Mozzarella Cheese
2 t. Kosher salt
3 T. Extra Virgin Olive Oil
Optional: 4 oz. Pancetta - pan fried and crumbled
1 lb. Tinkyada Rice Pasta
Preparation
Prepare rice pasta according to package instructions. Rinse with cold water and drain throughly.
In food processor combine garlic and salt. Blend. Add basil, cheese, salt and olive oil. Blend. Add more salt and olive oil to reach desired consistency.
Add pesto to drained pasta and toss. Add pancetta if desired.
Putinto individual containers and store in the refridgerator. Take them out for lunches. They can be reheated and put into a thermos or served cold.
