Ingredients

1c vegetable oil

2c sugar

3 large eggs, well beaten

1 Tbs vanilla extract

2 1/2c all purpose flour

2 tsp baking powder

1 tsp ground cinnamon

1 tsp grated nutmeg

1 tsp baking soda

1 tsp salt

3c peeled chopped apples

1c chopped pecans

Preheat oven to 350°F. Generously grease and flour a 10" Bundt pan.

In a large bowl, mix the oil, sugar, and eggs. Add the vanilla. Whisk together the flour, baking powder, cinnamon, nutmeg, soda, and salt in a medium bowl. Blend into the oil mixture. Fold in the apples and pecans. Pour and scrape the batter into the prepared pan and bake for 55-60 minutes. Cool the cake in the pan for 5 minutes. Invert and finish cooling on a rack. Drizzle brown sugar icing over the cake.

Combine the brown sugar, butter, and milk in a small saucepan; bring to a boil, stirring constantly. Remove from the heat and stir in the vanilla. Beat with a wooden spoon until the icing is cool.
