Ingredients

1 tbsp. white sugar

3 tbsp. melted butter

1 ½ cups all purpose white flour

1 ¼ cups milk

1 egg

3 tsp. baking powder

1 tsp. salt

1 tbsp. lemon juice

1 tsp. vanilla extract

¼ tsp. almond extract

Preparation

Combine everything in a mixing bowl, adding the baking powder last. Using your favorite mixing method, mix until the batter is smooth and homogenous.

Place a griddle over medium heat. Keep it well-greased with butter between pancakes.

Use a bit less than ¼ cup of batter per pancake. Flip the pancakes as soon as possible (knowing when to flip a pancake is more an art than a science).
