Ingredients

3 tablespoons olive oil

2 tablespoons butter

1 medium onion, finely chopped

1/2 pound guanciale, in 1-inch slivers 1/4-inch thick

28-ounce can whole tomatoes

1/2 teaspoon red chili flakes, or to taste

Salt

Preparation

  1. Saute onion until pale gold with oil and butter over medium heat.

  2. Add guanciale/pancetta/bacon, cook for about 1 minute.

  3. Add tomatoes, chili pepper, salt, and cook for 25 minutes. Salt and pepper to taste.
