Ingredients
1/2 lb of medium sized shrimps - fresh or frozen
Two chicken breasts - sliced thin
2 large peppers - 1 red, yellow
2 tbsp butter
Pinch cayenne pepper
Pinch red pepper flakes
3 crushed garlic cloves
1 onion
1 1/4 c of arborio rice
1 cup of mushrooms - chopped
1 cup of snow peas
1/2 c white wine
12 oz of chicken broth
2 c water
1/4 c of parmesan cheese
1/4 c of fresh coriander
salt and white pepper to taste
Preparation
Melt butter in saucepan. Add chicken and garlic clove. Sprinkle with cayenne. Sir fry and remove from pan. Add peppers, onion, snowpeas, then add rice and stir till coated. While constantly stirring rice, add red pepper flakes and wine, stir till wine is absorbed. Add chicken broth, stir till absorbed, then add water (to create creamy textured risotto) Add in shrimp, cheese, salt and white pepper to taste.
