Ingredients

1 tsp plus 1 tbps olive oil

1.5 lb lean ground turkey

1 tsp salt

1 large onion, chopped

4 cloves garlic, finely chopped

2 tbsp chili powder

2 tsp cumin

1 tsp dried oregano

1 12oz bottle amber ale

1 28oz can crushed tomatoes

1 tbsp honey

2 tsp minced, canned chipotles in adobo sauce

1 15oz can black beans, rinsed and drained

1 tbsp fresh lime juice

sour cream (optional)

shredded sharp cheddar cheese (optional)

chopped scallions (optional)

Preparation

  1. Heat 1 tsp olive oil in a deep saute pan over medium heat. Add turkey and brown. Transfer to a small bowl, season with salt and set aside.

  2. Drain pan and add remaining olive oil and onion and saute for 5 min. Add garlic and cook for 1 minute. Stir in chili powder, cumin, and oregano; saute 30 seconds.

  3. Pour in ale and let simmer 5 minutes. Return turkey to pot and add crushed tomatoes, honey, chipotles, and 1/2 cup water. Reduce heat to medium-low; simmer 1 hour, stirring occasionally.

  4. Add beans during last 5 minutes of cooking to heat through. Stir in lime juice and serve with toppings.
