Ingredients

1.5 lbs. chopped sirloin

1 tsp. cumin

2 tbsp. lime juice

1 tsp. chili powder

1 can Mexican flavored rotel

8 oz. smoked gouda

8 oz. pepperjack cheese

1 jar pimentos

2 cups chopped lettuce

1/4 cup diced onion

1/4 cup diced jalapenos

2 cups diced tomatoes

Preparation

Brown sirloin with cumin, chili powder and lime juice in pan until only slightly pink. Place Rotel in small stock pot and add cheese. Cook slowly until cheese is melted and consistency is smooth. Add pimentos. Add sirloin and stir well. Remove from heat.

On a large serving platter place a layer of torilla chips. Cover with the cheese & sirloin mixture. Add lettuce, onion, jalapenos, and diced tomato. Serve with sour cream and extra chips on the side.
