Ingredients
1 cup almond flour/meal
2 eggs
1/4 cup water (for puffier pancakes, you can use sparkling water)
2 Tablespoons olive oil
1/4 teaspoon salt
1 Tablespoon raw organic honey
1 Tablespoon vanilla extract

TOPPING:
Slivered Almonds
1 Tablespoon of raw organic honey, heated and whipped, per each person.
Preparation
Turn on electric griddle to 400 degree heat setting.
Spray electric griddle with pam.
Whisk ALL ingredients together for 3 minutes. This should evenly distribute all sweetener and salt.
With a 1/4 cup, measure out mini pancakes onto griddle. Flip after they stop bubbling.
Top with butter replacement, or light margarine, and drizzle with honey and additional slivered almonds, if you desire.
