Ingredients

1 rabbit–cut up into pieces

1 cup carrots, cut in chunks

1 cup celery, cut in chunks

Garlic–to your taste

1 cup green olives with pits (Scilian)

1 tablespoon tomato paste

1 glass red wine

1 glass wine vinegar

1/2 glass balsamic vinegar

Salt and pepper

Preparation

Bake the rabbit at 400 degrees for one hour, turning once. In a pan, put olive oil, carrots, celery, garlic, and green olives without pits (smash them with a knife). Soften a little. Put rabbit back in pot. Add wine, vinegar, and balsamic (the total amount is not as important as the porportions–start with about a cup each of wine and vinegar, 1/2 cup balsamic). Add salt and pepper to taste. Simmer 1/2 hour.
