Ingredients
.5 Box Mezze Penne
8 small Roma tomatoes
Salt
Pepper
2 slices italian or sour dough bread
Tomato paste (use sun-dried if possible)
Garlic
I can anchovies
Preparation
- Roast halved tomatoes covered in olive oil and a pinch each of salt and pepper at 450 F for 20-30 minutes.
- Boil water, cook penne to almost al dente.
- Toast bread ll the way through in oven at 450 F or use toaster on low for a few minutes. Place in food processor.
- Place 2-3 tbs. of olive oil in sauté pan. Saute anchovies on medium high until brown and no longer “fishy”.
- Add garlic and roasted tomatoes to sauté pan.
- Add tomato paste.
- Drain pasta and add to sauté pan.
- Fold in bread crumbs and serve immediately.
