Ingredients

.5 Box Mezze Penne

8 small Roma tomatoes

Salt

Pepper

2 slices italian or sour dough bread

Tomato paste (use sun-dried if possible)

Garlic

I can anchovies

Preparation

  1. Roast halved tomatoes covered in olive oil and a pinch each of salt and pepper at 450 F for 20-30 minutes.
  2. Boil water, cook penne to almost al dente.
  3. Toast bread ll the way through in oven at 450 F or use toaster on low for a few minutes. Place in food processor.
  4. Place 2-3 tbs. of olive oil in sauté pan. Saute anchovies on medium high until brown and no longer “fishy”.
  5. Add garlic and roasted tomatoes to sauté pan.
  6. Add tomato paste.
  7. Drain pasta and add to sauté pan.
  8. Fold in bread crumbs and serve immediately.
