2 large eggplants
2-3 zuccinis
2 toamtoes
4 oz.mushrooms
cilantro
olive oil
cheese
breadcrums
chicken/or beef broth 2-3 oz.
2-3 garlic cloves
tomatoe sauce eg.marinara
Preparation
Scoop eggplant flesh & dice dice zuccinis & tomatoes & mushrooms Saute diced tomatoes,eggplant & zuccinis in 2-3 tbls.olive oil…add broth & tomatoe sauce When soft add remaining ingredients Place eggplant skins in oven at 350 for 5 minutes Place saute mixture in eggplant shells …sprinkle breadcrumps & bake for 10 minutes at 350 Sprinkle cheese & broil until cheese melts
