Ingredients

1 cup cooked quinoa

2 chopped tomatoes (seeds removed)

4 chopped green onions

1 can black beans (rinsed and drained)

4 fresh cooked corn on the cobs

(kernals sliced off)

1/4 cup cilantro chopped

1/4 cup fresh lime juice

2 TBS olive oil

1/2 tsp cumin

season to taste with tony’s Chachere (creole seasoning)

Preparation

Cook quinoa according to package instructions and allow to cool. Cook fresh corn 3-4 minutes and cut from cob. Combine all ingredients and refridgerate.
