Ingredients

1 lb. Angel Hair Pasta

2 (8oz.) packages white

mushrooms, sliced

1 small pumkin (about 1-1/2

lbs.

1 clove fresh garlic minced

2 tablespoons olive oil

salt & pepper to taste

1/4 teaspoon fresh oregano

1/4 teaspoon fresh parsley

1/4 teaspooon basil leaf crushed

Preparation

Cut skin off pumkin and slice into approx. 1" pieces. Prepare skillet with olive oil. When heated, add garlic, cook until light brown. Add pumkin and simmer until tender. Add sliced mushrooms, stir, simmer for 8 minutes. While simering, Boil water for Pasta, and cook angel hair until desired tenderness. Drain pasta, put on large serving plate, top with mushrooms & Pumkin mixture. Serve immediately, it’s great!
