Ingredients

1 tablespoons olive oil

1 carrot, crinkle cut into 1/4 inch pieces

1/2 cup red or green pepper, chopped

1/3 cup yellow zucchini, sliced

1/4 cup oil packed sundried tomatoes, chopped

2 cloves garlic, minced

12 ounces, angel hair pasta

2/3 cup chicken broth

2 tsp. fresh parlsey

1/4 cup freshly grated Parmesan cheese

Preparation

Begin by heating water for the pasta. Heat 1 tablespoon oil in a medium skillet over medium heat. Add vegetables and sundried tomatoes and garlic to skillet and allow to cook for about 2 minutes. Cook pasta according to package directions. While pasta is cooking, add the chicken broth, parsley and Parmesan to skillet. Reduce heat and simmer for 4-5 minutes. Drain pasta. Place in a serving bowl and top with vegetable and sundried tomato mixture. Serve immediately. You may choose to garnish with additional Parmesan cheese and parlsey.
