Ingredients
2 eggs, beaten
1/4 c. olive oil
1/4 c. cream or half & half
1 finely minced shallot
2 T. capers, finely minced (preserved in salt, not brine)
1 T. worcestershire sauce
1 t. Old Bay seasoning
1/2 t. cumin
1/2 t. salt
1/2 T. cayenne pepper
1/4 t. dill
1 cup panko bread crumps
1 lb. lump crabmeat (picked through for shells & cartilage)
Oil for sauteing
Preparation
Combine all ingredients in a bowl. Form into cakes. Saute in olive oil until golden and crisp, turning only once.
