Ingredients

1/2cup self-raising flour

3/4cup rolled oats (toasted muesli is also good)

1/2cup sugar

1/2cup dedicated coconut

Pinch of salt

1Tbs boiling water

55g butter

1dessert spoon golden syrup

1/2tsp bicarbonate of soda

Preparation

Prehet oven to 180C. Grease baking trays Sift flour into a large bowl and mix in oats, sugar, coconut and salt. In a saucepan, combine boiling water with the butter and golden syrup. Bring to the boil and add the bicarbonate soda. Add liquid to dry ingredients and mix well. Place spoonfuls of mixture on prepared trays and flatten with a floured fork (leave room for spreading). Bake for 10-15 minutes, until golden brown. Remove from the trays before they harden.
