Ingredients

1 1/4 cups chopped dates

1 1/4 cups water

1 tsp baking soda

3 tablespoons of butter

3/4 cup sugar

2 eggs beaten

1 cup self-rising flour

1 cup bittersweet chocolate chopped

1 cup brown sugar

1 cup cream

3/4 cup butter

Preparation

  1. preheat oven to 350 degrees F
  2. Grease a 9" sqaure pan - line with baking paper
  3. Combine dates and water in saucepan, bring to a boil
  4. Remove from heat add baking soda and let set five minutes
  5. Blend date mixture until smooth in blender or food processor.
  6. In separate bowl ream butter and sugar until light and creamy
  7. Beat eggs into butter mixture.
  8. Fold in flour and chocolate. Add date mixture.
  9. Pour into prepared cake pan and bake for 50 minutes.
  10. Make Carmel Sauce…Combine butter, brown sugar and cream over heat..boil for 3 minutes.
  11. Serve warm pudding in with carmel sauce drizzled over squares. Serve with cream or a good vanilla ice cream.
