Ingredients
1 1/4 cups chopped dates
1 1/4 cups water
1 tsp baking soda
3 tablespoons of butter
3/4 cup sugar
2 eggs beaten
1 cup self-rising flour
1 cup bittersweet chocolate chopped
1 cup brown sugar
1 cup cream
3/4 cup butter
Preparation
- preheat oven to 350 degrees F
- Grease a 9" sqaure pan - line with baking paper
- Combine dates and water in saucepan, bring to a boil
- Remove from heat add baking soda and let set five minutes
- Blend date mixture until smooth in blender or food processor.
- In separate bowl ream butter and sugar until light and creamy
- Beat eggs into butter mixture.
- Fold in flour and chocolate. Add date mixture.
- Pour into prepared cake pan and bake for 50 minutes.
- Make Carmel Sauce…Combine butter, brown sugar and cream over heat..boil for 3 minutes.
- Serve warm pudding in with carmel sauce drizzled over squares. Serve with cream or a good vanilla ice cream.
