Ingredients

2 ½ cups (375g) self - raising flour

¾ cup (150g) firmly packed brown sugar

1 tsp ground cinnamon

410g can pie apples

1 egg

2/3 cup (160ml) buttermilk

½ cup (125ml) vegetable oil

Coconut Crumble

¼ cup (35g) plain flour

1 ½ cup (25g) flaked coconut

20g butter

Preparation

  1. Preheat oven to moderately hot. Grease 12-hole (1/3 cup/80ml) muffin pan.
  2. Coconut crumble: place ingredients in small bowl; rub butter into mixture using fingertips.
  3. Combine flour, sugar and cinnamon in large bowl; stir in apple, then combined egg, buttermilk and oil. Spoon mixture into prepared pan; top with coconut crumble. Bake in moderately hot oven about 20 minutes.
