Ingredients
3 cups flour
2 cups sugar
1 cup vegetable oil
1 teaspoon baking soda
1 teaspoon salt
2 teaspoons vanilla extract
3 eggs
3 cups diced apples
1 cup walnuts (optional)
½ cup raisins (optional)
Preparation
Preheat oven to 325 degrees. Peel and core apples, then cut into tiny squares and set aside. Combine flour, sugar, oil, baking soda, salt, vanilla, and eggs and mix at low speed, be sure to scrape sides of the bowl to combine all dry ingredients, for about 3 minutes. Stir in apples, walnuts, and raisins. Pour into greased baking pan ( I tend to use my bundt pan). Bake for approximately 1 hour-check with toothpick, if toothpick comes out clean, cake is done. Cool on wire rack, then sprinkle with confectioners (powdered) sugar if desired.
