Ingredients

2 cups sugar

3/4 cup vegetable oil

2 eggs

1 teaspoon vanilla

1/2 cups chopped walnuts

2 cups flour

2 teaspoon cinnamon

1 teaspoon baking soda

1/2 teaspoon salt

4-5 medium apples, peeled, cored and dices

Preparation

Preheat oven to 350 degrees. Grease a 12 cup bunt pan and dust with flour. In a medium bowl combine flour, cinnamon, baking soda, salt and walnuts. In a large mixing bowl, combine sugar, oil, eggs and vanilla. Blend well with electric mixer. Stir in flour mixture and blend thoroughly. Stir in diced apple. Spread batter in prepared pan. Bake 1 hour or until toothpick inserted in center of cake comes out clean. Cool for 10 minutes in pan, then remove onto wire rack.
