Ingredients

1 small celery root, trimmed, peeled, and cut into matchsticks (about 2 cups)

1 Granny Smith apple, cut into matchsticks (2 cups)

1/4 cup plus 1 Tbsp. apple cider

2 tsp. Dijon mustard

1 tbsp EVOO

2 tsp. chopped fresh flat-leaf parsley
