Ingredients

1 2/3 C graham cracker crumbs

1/3 C packed lt.br. sugar

butter or margarine

cinnamon

3 medium cooking apples, cored, peeled and sliced

sugar

4 eggs

1 - 8 oz cottage cheese

1 -8 oz cream cheese

grated peel of one lemon

2 tsp vanilla extract

1/4 tsp salt

1 cup heavy or whipping cream

Preparation

Preheat Oven to 450°

Put cracker crumbs into springform pan w/ 1/3c br. sugar, 1/2c butter & 4tsp cinnamon. Press into pan. Keep in frig til needed.

In a heavy skillet, glaze apple rings (3 or so min. per side, til nicely golden) in 1/4 C butter & 2 tbls sugar).

Take about six or eight of the glazed apple rings and place on bottom of springform pan. Keep the rest on something like wax paper, so they won’t stick.

In Blender put eggs, 3/4C sugar, cottage cheese & remaining ingredients except cream. Blend at med. speed until smooth. Add cream, blend. Pour into springform pan. Arrange reserved apples on top. Sprinkle w/cinamon. Bake 10 minutes. Turn oven control to 300 and bake 55 minutes. Cool cake 30 minutes
