Ingredients
5 Apples, tart e.g. Granny Smith, peeled cored and diced, bruniose
1/2 c bourbon
1 c vinegar (apple cider or red wine)
2 c sugar
1/2 small onion small dice
1/2 lb golden raisins
1/2 navel orange zest
1 T salt
1/2 t ground mustard
1 t cinamon fresh grated
1 t pepper fresh ground
1 t cardamom
1/2 t nutmeg fresh grated
2 T ginger fresh minced
Preparation
combine all ingredients in a rondeau and simmer over medium low heat till most liquid is gone. approx 1-2 hrs. stirring occasionally. check for taste.
should hold up to two weeks in fridge and the worst that can happen, after that, is it starts producing alcohol.
