Ingredients
1 cup dried cranberries
1/2 cup raisons
2/3 cup granulated sugar
3 tbl flour
1/4 tsp allspice
1/8 tsp ground cloves
1/4 tsp ground cinnamon
2 to 2.5 lbs of cookin apples skinned, cored and sliced. Use apples such as granny smith, pippin
2 tbl brandy
1 tsp vanilla extract
2 - 9" pie crusts
1 egg yolk
1 tbl whipping cream
Preparation
The filling below can be made up to 2 days prior to baking, refrigerated in a large plastic bag.
- Mix cranberries, raisons, and sugar together in a large bowl, covering the berries with sugar.
- Add flour, all spice, cloves, and cinnamon to bowl and mix.
- Add sliced apples to bowl, mix well.
- Add brandy and vanilla extract, mix well. If storing for future use, place filling into a large storage bag.
- This recipe requires 2-9" pie crusts. Either prepare fresh or use store bought crusts.
- Pre-heat oven to 350 degrees.
- Place one crust on bottom of pie pan.
- Fill the crust in the pan with the filling, slightly heaping over the height of the pan.
- Put second pie crust over the filling, pinching top and bottom crusts together at the edges.
- Beat together whipping cream and egg yolk in a small bowl. Brush mixture over top crust including edges.
- Bake pie at 350 degrees for 1 hour. Remove from oven after 1 hour and allow to cool to just over room temperature to serve.
